How to make accidental #healthy muffins… and what to do to fix “accidental”

Try not to laugh, okay? I wanted to make healthy pancakes this morning, but – embarrassingly – it’s been oh-so-very long since I made them from scratch. I decided I was gonna make do with the ingredients I have on hand – it’s worked in the pass-ahem! -

I most often use Bisquick. This time I added whole wheat flour, baking soda and powder, cinnamon, soymilk, light mayo to replace eggs since I was having a spinach omelet, vanilla extract, wheat germ, honey and… uh, I think that’s all. Oh, I forgot I added some unhealthy dark chocolate cocoa mix. I mixed it up and it was a bit dense so I added more soymilk. I know what you’re thinking and nope I don’t have any applesauce.

Adding more liquid wasn’t an option because I didn’t want to make a dozen horrible muffins.While staring at the mix I was thought… hmmm, perfect for muffins

2014-01-22 09.19.22About 30 minutes and 350 degrees later, after I’d eaten my spinach omelet, I removed the muffins from the oven. Immediately I could tell they were dense and dry, but I wasn’t thwarted. I took a bite and the muffin had a good flavor – although they’re something missing I can’t place. I wasn’t necessarily put off by what little sweetness there was and I prefer moist muffins; for the most part.2014-01-22 09.18.56

I know, they don’t look that great in the pan, but… now, they don’t look that great outta the pan either.

A mug of cinnamon coffee and two muffins later, I’m still pleased. These muffins would be great with raisins in them, fruit preserves or almond butter. I’m sure they’ll be great with regular butter to, but although I use light, cholesterol friendly butter I resisted this time.

And the next time you “mess up” something you’re baking just think of something you can add to it to make it something else or just modify your plans. You’ll be surprised what goodies you can come up with. What? Noooo, I have no more experience with that.

Tone to Christian tunes #product #review

It is pretty accurate to say I’m not a fan of working out right now. There’s the laziness (fueled by chronic pain and medications), the unwillingness to believe I have to do so much more than in the past to lose weight (seriously, why aren’t healthier food choices fueling change?), and… well,  I have really been feeling horrible.

Those thoughts rattled around my brain while I was getting up the energy and desire to review In The Beginning, a Shazzy Fitness DVD. I didn’t know what to expect when I popped the disc in, but I had to give Shazzy a try.

There were a couple of things that caught my attention when the DVD began including the tagline “Shape What the Father Gave You.™” Clever, right? Then the Shazzy team introduces themselves and the main menu appears where easy-to-follow, verbal instructions are given.

Those who are quick to pick up moves and dancing will have a much easier time catching on than folks like me who need each move repeated a couple of times before moving on to the next. The routine picks up from the first beat, repeats a couple of times before it’s time for the next song. Thus far, I think the chosen Christian music is a winner. Although I’m not really a fan of  lyrics while working out I did notice some of the song lyrics played smoothly in the background. The hip hop steps definitely incorporate moves to target key areas of the body so you’ll be dancing and having fun while toning.
